July 2018 Recipe of the Month

GoodGrandma℠ Recipe of the month is Peanut Butter Squares by GG’s sister Angela, aka Angie, an amazing sister, fabulous wife and mother, amazing teacher, grandma someday (hopefully soon), and a fantastic baker and cook. She is awesome! These Peanut Butter Squares are a family favorite, especially with my little brother, Weston. The recipe came from Scera Park Elementary, years ago when school lunch was prepared at the school.

Recipe: Peanut Butter Squares

  • 3/4 cup peanut butter
  • 3/4 cup white sugar
  • 3/4 cup brown sugar
  • 2 eggs
  • 1 Tbsp vanilla
  • 1 1/2 cups flour
  • 1/2 tsp salt
  • 1 tsp baking soda
  • 1 1/2 cups rolled oats
  • 1 (12oz) package chocolate chips

Cream butter, peanut butter, and sugars together; add eggs and vanilla. Mix in flour, salt, baking soda, and oats. Press into a jelly roll pan. Bake at 375̊ for 10 to 12 minutes. Right after it comes out of the oven sprinkle with chocolate chips. Spread melted chocolate over the top and cool.

Frosting

  • 1/3 cup peanut butter
  • 1 2/4 cups powdered sugar
  • 1/4 cup evaporated milk
  • 1 tsp vanilla

Mix all ingredients together until smooth. Add more milk or powdered sugars, as needed, for spreading consistency. Spread on top of the chocolate and enjoy!
