I enjoy preparing meals for family get-togethers or when family comes into town for a visit. I have grown accustomed to preparing more than enough food. Recently we had our Californians visit and I had dinner and dessert ready as soon as they got here. I made beef and chicken enchiladas, had chips, homemade salsa, and chocolate chips cookies for dessert. (You can’t come to Grandma’s and not have cookies!) My dear sister-in-law, Jane, taught me to use a hand mixer to shred the cooked chicken and cooked beef. It made it so easy to put the enchiladas together.
