GoodGrandma℠ Recipe of the month is Peanut Butter Squares by GG’s sister Angela, aka Angie, an amazing sister, fabulous wife and mother, amazing teacher, grandma someday (hopefully soon), and a fantastic baker and cook. She is awesome! These Peanut Butter Squares are a family favorite, especially with my little brother, Weston. The recipe came from Scera Park Elementary, years ago when school lunch was prepared at the school.
Recipe: Peanut Butter Squares
- 3/4 cup peanut butter
- 3/4 cup white sugar
- 3/4 cup brown sugar
- 2 eggs
- 1 Tbsp vanilla
- 1 1/2 cups flour
- 1/2 tsp salt
- 1 tsp baking soda
- 1 1/2 cups rolled oats
- 1 (12oz) package chocolate chips
Cream butter, peanut butter, and sugars together; add eggs and vanilla. Mix in flour, salt, baking soda, and oats. Press into a jelly roll pan. Bake at 375° for 10 to 12 minutes. Right after it comes out of the oven sprinkle with chocolate chips. Spread melted chocolate over the top and cool.
Frosting
- 1/3 cup peanut butter
- 1 1/2 cups powdered sugar
- 1/4 cup evaporated milk
- 1 tsp vanilla
Mix all ingredients together until smooth. Add more milk or powdered sugars, as needed, for spreading consistency. Spread on top of the chocolate and enjoy!
