GoodGrandma℠ Recipe of the Month comes from our Grandpa Cloward. His chicken and rice recipe was everyones favorite, I mean EVERYONES favorite! Here is a little background on Wells. He served as a cook in World War II in the Navy on a troop carrier. After the war he return home and he and his wife, Myrle, opened up their own restaurant. A decade later, he was hired by the local university to create a food service on campus. He lead and directed an award winning food service for 30 years. So, we think we can say, he knows his way around the kitchen.

When Grandma Colleen was a young mother, she called her Grandpa Wells for some of his recipes. He told her he didn’t really have them written down, so he just relayed them to her over the phone to her with some tips and tricks of the trade. Grandma Colleen still has the paper with her Grandpas recipes and uses them quite often.

Chicken and Rice Recipe

  • 4 Chicken Breasts
  • 1 head of Broccoli
  • 3/4 cups Rice

Sauce:

  • 2 Cans Cream of Chicken Soup
  • 1 can Milk
  • 1/2 cup Mayonaise
  • 1 t lemon juice
  • 1 cup Grated Cheese

Cook chicken and dice set aside. Cook head of broccoli standing up in pan with a little water and only boil until tender then chop. Mix together all ingredients for the sauce together. In a 9×12 pan mix chicken rice and broccoli together.  Pour sauce over mixture and sprinkle cheese on top. Bake and 350º for 20 min or until rice is cooked and casserole is hot.
