Ever since I can remember, I’ve had ice cream pie for my birthday dessert. At my request. And never any other time in the year (I don’t know why). The crust is made with Rice Krispies and peanut butter. I prefer vanilla ice cream and Hershey’s chocolate syrup. But any kind of ice cream works (your preference). It’s absolutely delicious! Side Note: Papa will be celebrating his birthday in a couple of weeks, ICE CREAM PIE will be served!
Ice Cream Pie
- 2 cups Rice Krispies
- 1/3 cup peanut butter
- 1/3 cup white Karo Syrup
- 1 1/2 quarts softened vanilla ice cream
- Combined peanut butter and Karo Syrup. Mix well. Fold in Rice Krispies until well blended. Press mixture into pie tin. Fill with the softened ice cream. Freeze for about 4 hours or overnight. Remove from freezer about 10 to 20 minutes before serving. Slice and add Hershey’s syrup.
